As many
chemists produced mineral waters of varying descriptions, below are a selection of 1892 and 1898 recipes for such products;
Ginger Ale
Take of
Foam liquid
..1 drm
Citric acid
1 oz
Essence of ginger ale
1 oz
Caramel

Cane sugar
..3 lbs
Distilled water, to make ½ gallon.
Dissolve
the sugar in the water, and when cold, add the other ingredients. Two
tablespoonfuls to half a pint of water
Ginger Beer
Take of
Ginger root (bruised)
.262 grains
Lump white sugar
.1 lb
Cream of tartar
.1/2 oz
Solid yeast
2 oz
Boiling water
6 ½ pints
Infuse the
ginger in the water until cold, then add the other ingredients, and put in a
moderately warm place to ferment. After a few days, strain
and bottle.
Hop Ale
Take of
Foam liquid
..1 drm
Citric acid
1 oz
Essence of hop ale
...1 oz
Caramel
..A sufficiency
Cane sugar
.3 lbs
Distilled water, to make ½ gallon
Dissolve
the sugar in the water, and when cold, add the other ingredients. Two
tablespoonfuls to half a pint of water
Spruce Beer
Take of
Essence of spruce
..1/2 oz
Treacle
..2 lb
Fresh yeast
1 ½ oz
Water
2 gallons
Boil one
gallon of the water and then mix it with the other cold gallon; stir in the
treacle and the spruce, and, when cooled, the yeast. Set aside for a few days
to ferment in an open jar, after which strain and bottle.
Botanic Beer
Take of
Germanic yeast
1/2 oz
Capsicums, bruised

Calamus, root

Lemon peel, fresh

Horehound

Gentian root
4 oz
Dandelion root, dried

Raw sugar
..12 oz
Boiling water

The herbs are
infused in the water for eight hours, and then the sugar, yeast, and colouring are added. Set aside for a day or two to ferment,
and then bottle.
Soda Water
Bicarbonate of soda
.30 grns
Water
..20 fl oz
Dissolve and bottle at a pressure of 120lbs as
indicated by pressure gauge.
Twenty
gallons of the above solution may be made as follows;
Dissolve 10oz of bicarbonate of soda in forty
fluid ounces of water, and filter. Place this filtered solution in a suitable
slate or aluminium tank, and make up to twenty
gallons with water. Well mix, and carbonate as above directed.
This
preparation may be labeled Medicinal Soda Water. Ten fl oz of this
preparation contains 15 grains of bicarbonate of soda.
